Semolina Artisanal Pasta's strozzapreti is a scroll-like shape that traditionally comes from Emilia-Romagna and Tuscany, but there are also versions from Southern Italy. It's beloved among our customers for its versatility, wonderful al dente texture and ability to capture sauce. Try with hearty sugos and ragus.

Pasta Cooking Tips:

  • Use a large enough pot so your pasta doesn't stick together.
  • Salt your water aggressively. Not sure how much? Taste it! We use about a tablespoon of Diamond Crystal Kosher salt per quart of water.
  • Remove your pasta from the water before it's totally al dente and SAVE YOUR PASTA WATER!
  • Fresh pasta cooks in about 2 minutes. Dried pasta takes 6 minutes or more.
  • Finish your pasta in your sauce with a ladleful of pasta water.

When I started Semolina Artisanal Pasta in 2014, I had two toddlers and a singular goal: To make traditional dried pasta that rivaled the best from Italy.

To that end, we at Semolina put flavor and texture first, and that means an uncompromising commitment to old world methods and quality ingredients. We craft all our traditional pastas using American-grown durum wheat semolina and water, extruding through bronze dies and drying slowly and at low temperatures. We let the wheat tell its story, transformed from a humble blend of flour and water into something delicious. 

So whether you're cooking some pasta up to have with a batch of your grandma's sauce or are trying your hand at a version of Amatriciana from your favorite trattoria, our pastas will grab the sauce and add the perfect al dente texture to your dish.
